(Insert self expanatory title here)

My super duper fast awesome computer died a few weeks ago and since then I have not been the same. Not only do I feel handicapped, but I deleted ALL me iPhoto photos before backing them up, ugh! I mad sure to back up my 7000+ mp3s though. And not to mention all my shortfilms and photoshopped masterpieces, lol. I am currently running on a trash find. A Dell, Windows, piece, of, shit! Slow as fuck! I managed to delete most crap making it able to charge my iPod touch and play music and that is about it cause the thing is so slow it hurts. My touch is WAY faster and WAY mr efficient. Just sayin'!

So, where do I start?? Ummm, well, I just got in from dep obviously getting illegal booze. I was working tonight and went for a beer with friends from work and ending up meeting up with other friends in old port only to come to an afterparty NEXT to my appartment in the Ghetto which had NO booze, ugh. SO I hopped on my skate to meet up with my friends (who had already ditched the party cause no booze) which was back in Old Port. I got to the area and got a text sayin' it was off cause the roomate was home. UGH!!! So, back to Ghetto to my local dep to get afterhours booze. I get the beers in my back and go to pay. Only to realize my wallet was AWOL! I left my bag there and skated home to get the wallet and skated back.......... There is alot more to this story which is pretty R rated and you probably couldn't let your mother read but yeah......... Like some said to me tonight, I like winter. Figure it out for yourselves.

Osheaga was totally amazing. Saturday was great. I guess Beach House was super good minus the snobby delay and me and Brent's tired, sore bodies. Jim was working security that day so didn't see him much. He met up with us briefly during BH. Then we saw Arcade Fire which was so good. I have known of them for a long time but never got into them. Once they started playing I knew most of their songs. The fireworks started when they were playing which gave me the brilliant idea of "Arcade Fireworks". There, I said it. lol.
I finished my night at Mado and then Parking. Rock and Roll!!!

Sunday was totally insane. We drank at Brent's until about 4. Jim and Vicky met up with us and we took the oh so pretty boat over to the island. We then split up with Jim and Vick to see We Are Wolves. They, for me, rocked out the most out of all bands. I knew they would. It was super good. I got great photos of Alex. (Lead singer) I paid him a shot las month cause their music really inspires me. And my compliments really inspired him. He said some mornings he wakes up and doesn't know what he is doing.

I would like to type forever but, it's late/early. We saw Snoop perform and then went backstage and then to Artist's World, which is away from site where all the musicians and "cool" fuckers hang out. Chuck Hughes was incharge of catering and we ate a bit and had free beers. We watched Emily Haines (Metric) get dressed and get ready for her show. Sonic Youth also was chilling ot in front of us........

Snoop then arrived and we managed to go behind his trailer with him and his dudes where he rolled blunt after blunt. I felt a bit out of place cause they were pretty thugged out duded wh were mostly his friends and entourage. Still, I sat with Snoop in privacy while he smoked doobs and brought up New Brunswick for some weird reason while talking about places he's been in Canada. I then spoke up and said "I'm from there!". "What??" he says. Then.: "Word dog!"! lol.......
Amazing!

We came back to mainstage to see Weezer. Was he best show of the weekend.

I will write about it next post and about the Interpol show which was for sure the best show I have EVER seen.......

This Sunday is Scissor Sisters and next week is Vampire Weekend, Dum Dum Girls and Beach House (3rd time in 4 months, genre). Can't wait!

My table d'hote starts tomorrow and I and putting my version of the "Big Mac" on it. Le Big Saloon! Gonna be a mad seller. Not to mention my mousse de foie and pates au canard. Ballotine de poulet, saumon rose, sauce aneth pis, yeah!

I gotta wite more often cause I feel like I have been super vague with my details and I know I could add alot to these stories. But, that is that and if you wand more details, then just fuckin' ask!!

Interpol was SO AMAZING and I can't wait to tell you about their show. Put me in a trance and brought me to another level. Did the same to Jim and Brent apparently. Still my favourite band, after 4 years. We are Wolves are up there too.

A bientot fuckers!!

July 29th, 2010

Ahhhhh finally! I am back home and actually gonna make time to write some shit that I have been dying to write for days. No, weeks!! I seriously have been waiting for a time like this for a long time. It's not early or anything but I feel like now is a good time to finally get this stuf out of me. I even made a list of "keywords" that will help me remember shit that I want to write about so I don't forget. Kinda lake yearbook write-ups. Ell oh ell.

I actually just passed by the 24 hor dep on Parc (3 mins. from my home) to grab a beer. It was funny cause so many people go there to buy beer and we all know it's better to wait until all "other" clients are done and gone from place but, when all 3 of us are roaming around waiting for same thing, it becomes akward. That is when the clerk says: "Ok, you ALL wan the SAME thing, so, you 2 go outside and we do this one at a time!'. I know the deal. Bring abag and go over by the chips slash beer fridge and tell him what you want and open your bag. It's the same at most "24 hour" deps. Then you pass to cash to pay double or whatever. It's well worth it seeing how regular dep beer is already MUCH cheaper than bar or club beer. T'sait!

Yeah, so, that is it. People are already saying summer is almost over. Fuckem! It's like July 29th or whatever. Summer goes by SO fast with all the (free) activities and whatnot. Especially when you work 60+ hours at Saloon. I love it there and plan to stay there for a while. Even if it's my 4th time working there. I find it easier since I know the place so goddamn well. I quit a year and a bit ago and had horrible (with a "Wh") time finding a good job since then. Probably 'cause I like it so much at Saloon. I feel so comfortable there. That is all. I <3 Saloon.

So yeah, it's already August! I totally missed the fuckin' Fracofolies! :( I rarely have 2 days off in a row so....... When I have 1 day off, I usually do laundry and see my dad and Jean. (His hubby)
I do try to hit up the pool at Parc Jean Drapeau with Nat when I can and really enjoy it there. I did have a great time there one day and went to Foufounes after to meet Brent and Marc-Andre. Marc went to arts fest. in Village and me and Brent continued to drink before going to somthing something trio. A 40 dollar show t fuckin Metropolis that was ok until the douche started doing accoustic and talking about Jesus. We left. Went to main Jazz Fest stage to see closing fireworks and that was that.
Brent went home and I wentto meet Lorne in Mile End to see his buddies (Ultra Mega) from Winnepeg play a great show at Bar St. Laurent 2. I thoroughly enjoyed it and we all (band, me, Lorne etc.) went to play ultimate frisbee at the mountain and that was totally fuckin' gnarly. That was definately a "busy" effin' day, whuh whuh!

Saloon did their second edition of their 18th year anniversary on the 16th of July. I was originally off but preposed to Ben to do an "oyster bar", which he agreed on and was super fun. I bought Pinot Noir vinegar and another super yummy vinegar but I can't friggin' remember what it was. Uhhhh! Oh right! Of course, the best. Champagne vinegar. So good with oysters. Yeah, I ended up partying with the dj we got to headline for us. Manny Ward, originally from NY, living in SF. Great dude! We hit up an afterparty at some dude's house thenwent to his hotel to have beefast on the terrasse and then hit the hay. I unfortunately called in sick the next day because I partied too hard. Manny and I keep andtouch and I think he is a great dude. He went to Vermont after here for a week and flew back to CA. Must be nice to be able to travel so much just to play music and party. (Bitch, if you are reading this, I love ya!) I'll have my gee dee break one day. Watch me!

I have SO much fucking shit I wanna write. I bought an iPod Touch which is funny, cause I wanted to get a iPhone but, decided I don't wanna pay every month. I like the internet and have a phone so. I got the 32 gig which is like, 7000 songs + internet and games, apps, etc. I friggin' love it ya hear?! I saw Tom Green twice in 3 days and also saw the Trailer Park Boys and they were so fuckin' sauced. That was cool though, not my first time seein' them fuckers.
That same night I saw them, I was with Jim and Vyk at "La Grande Terrasse". I had been to the pool at PJD before and showed up for a beerbut we ended up staying for 6 hours ish.
Some dumb fuckin' retard lets his little fag dog, shit, in the middle of a busy pedestrian area in the Old Port. I jump the terrasse railing and confront him. I says: "Hey dude, you need a fuckin' bag?" He said he wanted one and, blah blah blah. I told him, fuck man, I got dog and it's his fucking responsibility. He told me fuck, horses shit ALL the time on the mountain and then he went into his appartment. I was pissed as fuckin' shit. So, I went to rub his dog's shit into his door just to realize he left his keys in the door. Lol. To be continued......

To finish up, Osheaga is like in one day. I can't wait to have a great weekend with Brent and Jimbo Slicerston. Beach House, We Are Wolves, Devo, Weezer, Sonic Youth, Snoop, Arcade Fire, Kele, .....ETC! Then, one week later is Interpol. They are putting out an album in Fall and performed "Barricade" (new track premier) on Letterman tonight. I'll prolly post it bitches. Haven't heard it yet.

Ummmm so yeah, to finish up, I love Salon Officiel and my Dad and my family. And, here's a funny story. I was lying in bed with an ex and I was texted Jim the day Lorie (special friend) was arriving). I told him: "In bed with ex and Lorie is arriving today. Two for two!". I sent it to Lorie by accident. HA! Douchebag much?!

Gay pride is here. Shotgunning beer is cool and I am making a list of "Top Ten Rules in the Kitchen", which starts off with the most important one. NEVER turn around into an area that you "think" will be empty cause, 40 percent chance is, it won't be and you will either ring someone's bell or get YOUR'S rung!! Stories to follow. (Lorne, will comment, and I will too) Other 9 rules will follow. As will my Osheaga summary. I need a GF and I love beer and snowstorms. Technology is right on too. Kiss.

I shouldn't even be writing this. I should go to bed. I had a crazy day.
I was at work at 12 doing the table d'hote until 5 ish then the supper rush which was RETARDED. We had a SUPER busy night. I had great compliments for the table d'hote so, I'm happy!

We all went to Parking then back to Ben's place for a little after party......

I'll write more soon cause it's 7 ammmmmmmmmm.....

Party in my Mouth

I went for dinner at my Dad's and his boyfriend's tonight. Gaelle, an old friend, is in town from France visiting so she joined us and it was a nice treat to see her.
I met Gaelle in Vancouver when I was fifteen and we kind of had a crush on each other. She was the niece of friends of the family's. We had flirty 15 year old fun for a couple weeks then parted ways. IT was sad but that was that. We tried keeping in touch (at least she did) but, I am horrible for writing letters and 13 years ago the internet was as booming as it is now. We lost ouch and she ended up moving to Montreal a few years after I did but we never really connected like we did when we were youngsters.

Tonight we had lots of "boucheés" to start, including 3 very nice cheeses, olives and feta marinated in oil and herbs, sausage and foie gras from France (mmmmmm, the foie gras was SO amazing), a salmon tartar that I made with chives, olive oil, pepper, capres, Tabasco and lemon juice. This orgy of great food is where the party started in my mouth. All these fine foods were washed down with red wine except the foie gras which goes quite well with a chilled white wine.

Our main course was duck pie with a mango, cherry tomato, cucumber, onion salad with a simple balsamic dressing. Accompanied by stormy weather and thundershowers.

Dessert consisted of 2 courses. First service being a joint and second service, raspberries and blueberries sauteed in butter and sugar, doused in Grand Marnier, served on chocolate ice cream and berry sorbet. Topped with fresh mint and cream.
Just sayin'.

Was a great night, was nice to see David, Gaelle,Shani and the 'rents. The bike ride home was nice with Gaelle. She was going to Laurier and St.Denis so we parted at Rachel and here I am, ready for bed and back to the grind tomorrow.
I love my job and I love food. I am getting really excited for Osheaga and Interpol in August.

Argentavis Magnificens

Sunday Impromptu

Crazy fun night!!
Started out at Jazz Fest with Marc-André and Brent. We saw bits and pieces of a few shows and then saw The Planet Smashers. They were totally fun. Ska full tilt. I love the ambiance and city view from the new Place Des-Arts. I can only imagine being a tourist and experiencing a free festival like this. Amazing.
I then went towards the Village to meet up with Bruce, Chinh and Ben at Ben's new loft. We drank and chatted for a bit then went to La Porte Rouge to drink more, dance and whatnot. Was fun, saw some great people and talked music and then went back to Ben's loft only to have a drink and head to Parking for last call. Ben and I then went to where he was staying (since he JUST moved into the loft) and chilled out till the early hours.
I just got home, I'm soaking wet from the rain. Taking dog out now and then making a late night (early morning) snack. Beef tartar, Bonne Nuit! FTW

Fried-aye!

I am back home from a quiet ish Friday night at Saloon. I kind of had a feeling it was going to be a quieter than usual Friday. It's really hard to judge but with the St.Jean weekend and Jazz Fest opening it turned out to be what I expected. I rarely have expectations with work though. Always gotta be ready for 8 buses of Chinese.

I may or may not have just put mdma/? up my nostril. Just sayin'.
We went to the terrasse at Sky after work. I didn't plan on going out but, relaxing on a rooftop patio after 10 hours of hard work can't be refused.
Last night was rather improvised. I went to Mado then biked home making a detour at Salon Off. only to pick up the 2 other Muskateers and company. We went to my place to party and around 6:30 I was abandoned to sleep.

I am totally stoked to be back at Saloon. After ten years, I feel so "at home" there. It's so nice to work somewhere you feel comfortable and familiar. Especially when you spend 60 odd hours there.

Hall to Oilers. England will beat Germany tomorrow and Interpol in August!!!!!

Newbies

Back from work. Drinking Boris Bold 8.6%. It's a French beer I guess. It's compliments of a cook. He bought it for payback for a "rough" night. It was one of his first nights on the line. It wasn't too busy but with watching over his shoulder and waiting on his brain to complete processing and complete plates I guess I deserved a beer. That's me putting what he said into my own words. I think.
The kitchen is a well oiled machine and if one part is not working up to par then it slows down the whole thing. I don't wanna bash on one person and I won't say his/her name but if I was in his shoes (and, I have been many times), I would accept the fact that, that's just the way it is. It's not personal. It takes time* to adapt and adjust to a certain beat. And if you can't then it ain't for you. And, you definitively ain't for it. (*When I say time, we're talking days. Not weeks)

I feel like this post is boring to I will spice it up with some poetry slash cut and paste:

My best friend's a butcher, he has sixteen knives
He carries them all over the town at least he tries,
Oh look it stopped snowing
My best friend's from Poland and, um, he has a beard.
But they caught him with his case in that public place
That is what we had feared

He severed segments secretly you like that
He always took the time to speak with me
I liked him for that.
He severed segments so secretly you like that
He always took the time, he always took the time

Killed for the Game

So, my father was telling me about this Man (S. African) who was beat to death by his wife and kids for wanting to watch soccer.
David Makoeya, a 61-year-old man from the small village of Makweya, Limpopo province, fought with his wife and two children for the remote control Sunday because he wanted to watch Germany play Australia in the World Cup. The others, however, wanted to watch a gospel show.
Makoeya got up to change the channel by hand after being refused the remote control and was attacked by his 68-year-old wife Francina and two children, 36-year-old son Collin and 23-year-old daughter Lebogang. It's not known what the family used to kill Makoeya. It appears they banged his head against the wall. They phoned the police only after he was badly injured, but by the time the police arrived the man was already dead.

Soccer makes people go crazy. Literally!

Go England!

Intro

The life and times of an artistic chef. Living and learning in the wonderful city of M to the ontreal. I have been cooking for almost twelve years and doing drugs and living life to the fullest for the same amount of time. Regrets? None! Life is about experimenting, learning and being happy. I have succeeded in two of those but unfortunately we learn until we die. You may learn right before you die that your son of 50 years of age is gay; or half black. But, I doubt it.

Having the opportunity to cook in about 20 restos, I have seen my share of fun and/or chaos. Now, I am not saying I stayed for long time at all of those 20 restaurants but long enough to get tastes.
I have met SO many waitresses and cooks and dishies, it's retarded. The people from away, the people from near and the people from God knows where. We all have one thing in common; we put ourselves through pure hell, night and day. lol.
